Queen's crown

(serves 4-6)

A rose by any other name...
Some call this a Dutch Baby or a German pancake. The edges puff up and look like a crown to us when it's done, so we couldn't resist giving it a new name. It will deflate a bit as it cools, but the queen should still hold her head high.

1/2 cup butter
4 eggs
1 cup flour
1 cup milk
1 tsp vanilla extract
1-2 pints strawberries, washed and hulled
1/4 of a lemon
2 Tbsp powdered sugar

Preheat the oven to 425 degrees. Put the butter in a frying pan that has an oven-safe handle. Put the pan in the oven while the oven is preheating in order to melt your butter and heat up your pan.

Lightly beat the eggs in a bowl. Add flour, milk and vanilla extract. Remove the pan from the oven. Pour the batter over the melted butter.

Put the pan back in the oven and bake for approximately 20 minutes or until golden brown.

Fill center with berries, dust with powdered sugar and squeeze lemon juice over the top.

Serve immediately.

Don’t burn your hands!
Oven-safe handles get hot. Keep an oven mitt on the handle to avoid grabbing the hot handle with your bare hands while you are slicing up the Queen’s Crown.
